Nerikiri are traditional Japanese wagashi — delicate, plant-based sweets made from white bean paste and glutinous rice flour. They’re crafted to resemble elements of nature like flowers, leaves, or seasonal motifs, and are often served with matcha during tea gatherings. Each piece is shaped and coloured by hand, turning humble ingredients into edible art that captures fleeting moments in time. The beauty of this experience is that crafting Nerikiri is a form of work meditation – slow, mindful and creative.
