Set in Chiang Dao’s hidden forests and gardens, this two-day workshop invites you on a unique forest-to-table journey. Learn how to craft cacao, coffee, or vanilla using traditional methods passed down by local farmers who've nurtured these crops for generations.You’ll get to choose one of three experiences: homemade cacao, homemade coffee, or homemade vanilla, depending on the season (see below). But it’s so much more than that - it’s an invitation to slow down and connect with the land, the people, and the traditions that honour patience and craftsmanship. You’ll walk through shaded gardens, learn to care for each plant, and follow the journey of each ingredient from seed to table.Your Seek Sophie hosts, Job and Pook, will guide you closely along. They traded the city life in Bangkok for Chiang Dao's mountains, and have been learning traditional farming techniques directly from the local community ever since.By the end of these two days, you'll understand why the forest canopy matters, how fermentation time affects taste, and what roasting temperature does to the beans. Leave with handmade products and a deeper appreciation for the time, care, and stories woven into every ingredient.Choose Your Seasonal Experience:🍫 Homemade Cacao (Available Year-Round!)Walk the cacao gardens and learn about tree care. Peel, ferment, dry, and roast your own beans.Grind roasted beans, temper the chocolate, and mould your own bars!Finish by baking "bean-to-brownies."What makes it special: Each month's harvest has slightly different flavour notes depending on rainfall and temperature (so no two visits are the same).Take home: Cocoa nibs, handcrafted chocolate bars, brownies☕ Homemade Coffee (December to January only)Visit coffee terraces, and pick ripe berries!Learn processing basics and roast beans.Practice different brewing methods: cold brew, coffee tonic, coffee liqueur. Learn extraction techniques that highlight different flavour profiles.What makes it special: Winter harvest produces the richest, most aromatic beans of the year.     To secure your spot, your host will turn away other guests. Because of this, cancellations aren't allowed.
  • Reschedule Policy

    You may reschedule free of charge if you notify us at least 30 days before the event date. (This option can be used once per booking.) If you notify us less than 30 days but more than 15 days before the event, a rescheduling fee of 1,274.10 THB per person will apply. If you notify us less than 15 days before the event, a rescheduling fee of 2,548.19 THB per person will apply. Once you have rescheduled, you will no longer be eligible to cancel for a refund.

Job and Pook are a couple who swapped the busy streets of Bangkok for the quiet beauty of Chiang Dao. They’ve built a home in the mountains that doubles as a place for learning, sharing, and enjoying good food. What started with a curiosity about local ingredients soon grew into a hands-on journey with tea—learning everything from picking to fermenting. Since 2019, they’ve been inviting others to join them in workshops that explore food, nature, and local traditions. Their small garden, lovingly tended with organic methods, and their strong ties with local farmers show how rooted they are in their community. Job and Pook’s place is more than just a home—it’s where connections are made.
