This hands-on sake-making workshop is led by the founders of Singapore’s only sake brewery, known for reimagining what sake can be.The team experiments with unconventional ingredients and cross-cultural influences - from black glutinous rice to chrysanthemum - challenging centuries-old norms while respecting the fundamentals of sake brewing. Learning directly from them means gaining rare insight into both the tradition and the innovation behind modern sake, guided by brewers who are actively redefining the category.In this immersive session, you’ll build your own sake mash (known as moromi) using professional-grade ingredients not typically available to the public. Along the way, the brewers will demystify the brewing process, share their creative philosophy, and explain how subtle choices shape flavour, aroma, and character.You’ll also get to taste a curated selection of 3 sakes that reflect your host's experimental spirit, accompanied by crackers and a cream cheese dip made with sake kasu! Meet Reuben Luke and Yumika Yamamoto, the founders behind Singapore’s first and only sake brewery since 2024. They faced plenty of doubts—from water quality to climate, and the high costs of brewing in a wealthy country. But it was their meeting that sparked something special. Through honest conversations and shared vision, they realised sake could be made anywhere, even in Singapore. Their goal is to create a new kind of sake, one that challenges traditions and welcomes innovation. It’s clear these two are driven by genuine curiosity and a belief that great things can come from anywhere, no matter the obstacles. Their story is about turning challenges into fresh ideas and building something truly different.
